3 STEP PLAN TO GET BACK INTO TRAINING

Fitness... the mere sound of the word makes me tired. Remember that New Year's goal I said I had to do, even though I didn't want to? Yeah, it's called working out. I'm tired of being overweight and feeling uncomfortable in everything I wear. I'm also very lazy when it comes to fitness.  I do not like to workout, it's just not fun. But as much as I hate it, I know I have to. With that being said, I was going into February without an ounce of motivation to exercise. It's so easy to find an excuse to not start, but a few days into the month I sucked it up and started.   Ok to be honest I have sporadically been working out. I haven't yet made it a routine. I really want to lose weight, but it's just so much easier to not exercise. My goals is to be at 140 by my birthday in September, and while that seems a long time away, I can't procrastinate because it will be here before I know it. NON DAIRY VANILLA CUPCAKES WITH CHOCOLATE GANACHE

Last week, on Valentine's Day, I posted a picture of cupcakes I had made for my husband.  I want to share this simple and delicious recipe with you. What you don't know is that those are non-dairy cupcakes with a non dairy chocolate ganache.  A few years back, my cousin and his wife told told us they had become vegan because his wife suffered from very bad allergies, to the point that she was unable to breath at night. They found out that cutting dairy would help with the allergies, because dairy suppresses the ability to fight allergies. My husband, who's allergies we just as bad and was on daily medication, decided to try it. So we cut dairy out of diet, and though it was difficult for him, because he loves, and when I mean loves I mean he is practically a cheese connoisseur, his allergies got better. They went away. For years he took a daily pill to be able to function properly and now he was able to go about his life without medication.  It's true what...

A VALENTINE'S DAY EDITION; ENTERING SOMEONE'S WORLD

A few years back my aunt gave me a book for my birthday entitled Squeeze the Moment, 31 Days to a More Joyful Heart.   Something I think we can all use more of in our lives . In the book the author, Karen O'Connor, tells stories in reference to the daily topic and then asks the reader to jot down their thoughts about what they read.   The first chapter entitled Entering Someone's World, O'Conner writes about a woman who recalls one of the first gifts that her husband gave her. It wasn't something she expected or even thought was romantic gesture, it was a rod and reel. Fishing may not have been her thing, but her husband wanted to share his passions with his wife. Many years later she was grateful and joyous that she was able to enter her husband's world and share her life with him. COCONUT CURRY LENTILS

As I look back on my life, I would have never guessed that one day I would love to cook! I learned to cook as a newlywed because I had to. As time passed I perfected the dishes I tried and really began to enjoy cooking. It wasn't just a chore or an obligation, it became another form of creativity. I really enjoy everything that goes into cooking, from planning and preparation, to creating the final product and enjoying the fruits of your labor. Another important element of cooking, for me, is presentation. It's important that my food not only taste good but look good too. My husband learned that important lesson one day when I made his mother's Coconut Bread Pudding, I set it to cool to later cut into perfect serving size squares. When my husband arrived, he saw the bread pudding and grabbed a butter knife and gouged a hole smack dab in the middle. I got so mad at him! FROM CLOSET TO PANTRY

When I was in high school I wanted to to be an interior designer.  I ended up majoring in communication, but I still had and will always have a passion for interior design. When I lived at home with my parents I was constantly changing things around in my room, moving furniture in our living room, or changing out our home decor.   Now, I love having my own home where I can decorate and design to my hearts content, well as long as my husband is on board too. 😜   We bought our home almost 5 years ago, it was a great home with great bones, but it was a bit of a fixer upper. Over the years we have been slowly remodeling and fixing it up. Some areas we gutted and rebuilt, while others, we just did cosmetic changes, like painting or changing outdoors. Last year I took on a project of converting the coat closet into a pantry. Right off our kitchen is a coat closet that we don't use. DISNEY DREAMING AGAIN

Guess where I went this past August? Yep... a Disney Cruise!  We got lucky and were able to get on an end of the summer 3 night Bahamian Disney Cruise. I really love and enjoy a cruise vacation! On Friday we drove to Port Canaveral, FL.  Everyone was extremely excited and eagerly awaited to go over the bridge and see the ship waiting at the docks. I've cruised on Royal Caribbean in the past, before children, and I had a great time. But with Disney Cruise Line it's a whole different experience.  From the moment you pull up to the terminal, you feel like you are transported to a different place. I was like a giddy kid waiting to enter the ship and begin my magical vacation. Because this was our second time on the Disney Dream, I wanted to get everything in that I missed.
